Cooking Instructions
Although the methods for cooking Wagyu are not complicated, the cooking process must be closely monitored to ensure a quality final result. Below are a few helpful tips to get started:
- Before applying any heat, make sure you allow your A5 Japanese Wagyu to come to room temperature. This helps it to cook more evenly.
- You'll also want to apply salt to help draw out a bit of the moisture so you can get a nice golden-brown crust when you pan sear it.
- Heat your pan thoroughly before putting the beef in the pan. This helps with even cooking and getting a good outer sear.
- Remove steak 3-5° prior to reaching your desired temperature as it will continue to increase when resting.

A5 Japanese Wagyu
- Once pan is heat thoroughly to medium high, add steak.
- Traditional cut 10 oz. steaks should need approximately 45 seconds on each side for a rare cook. Thick cut 16 oz. steaks should need approximately 60-90 seconds on each side. Note that it is important to only flip the steak one time.
- Allow the steaks to rest for at least 5 minutes prior to serving.
American Wagyu, Australian Wagyu, & USDA Prime
Due to its abundant marbling, it is not recommended to cook A5 Japanese Wagyu on an open flame. However, American and Australian Wagyu are purebred and crossbred, respectively. This makes them the perfect Wagyu brands to expand your cooking techniques with. See internal temperatures above for your desired doneness.
Australian White Lamb
Depending on the cut, lamb can be prepared a variety of way. Lamb racks and ribs are often roasted, whole lamb chops are more commonly pan seared. Refer to the internal temperatures below for your desired doneness.
